CNG DOES BLOOMING MARVELLOUS JOB FOR BETTYS

Everything’s coming up roses in the RHS gardens at Harlow Carr, Harrogate, and everything’s rosy in the café there too, thanks to CNG Foodservice Equipment.

CNG worked closely with café franchisee Bettys to expand the existing facilities in order to meet the growing demand of visitors keen to sample the Bettys experience while strolling the gardens. What’s more, the café remained open and fully operational throughout the project.

A massive five-phase plan created sections that are totally separate from others, and that meet all of the client’s requirements both operationally and in terms of food safety demands, which are always of the very highest levels.

Each section has its own preparation space, designed to take raw meat or fish, baked products or dairy, with room to assemble or cook the items either in the prep space itself or in a finishing area. Larder and sandwich preparation is in a temperature controlled and separated area, yet with ready access to the pass for speed of service.

“Countless hours were spent on the wash up, cold prep, hot prep, the main pass and cookline, in each section detailing and refining the space available, how it would be designed and manufactured, and how it compared with the existing as well as how it compared with other sites and other operators,” explains CNG Managing Director, Clive Groom.

“Creating the correct flow of products and people through the business was a key part of the design process, with the need to minimise waste and recycle as much waste as possible.

“Equipment needed to be mobile for ease of cleaning, the stainless steel fabrication had to incorporate high upstands, bullnose edges, many with panelled bases. The need for ease of cleaning and access lead us to design many items of fabrication with quick release mechanisms as well as tubular legs and base shelves that are 250 mm fffl rather than 150mm as is the norm.”

The resulting kitchen refurbishment has been well received by all at Bettys Harlow Carr, as well as Bettys’ head office.  The CNG team was praised not only for the detailed design of every aspect but also for meeting the client’s extreme demands in terms of food safety whilst making the design work for the operators, and achieving all of this within a budget, with uninterrupted service throughout.
